This hearty warm salad is a quick, easy way to get a plant based, super nutritious, and filling meal into your busy week. All you need is to make sure you have a good variety of vegetables and starchy vegetables on hand. You can pretty much substitute any ingredient here for whatever you want to use up in your kitchen. This recipe proves that healthy doesn’t have to be hard!

8 heirloom potatoes 1/2 large yam or sweet potato 1 bunch broccolini 1 bunch asparagus, trimmed of woody ends. 1 large avocado, cut in half, pitted, and scored into cubes 2 tbsp. hempseed 1 tbsp. dijon mustard 1 1/2 tbsp. apple cider vinegar Sea salt and pepper OPTIONAL; 1/4 cup nutritional yeast
Cut all of the vegetables into manageable pieces. There is no need to peel any of the potatoes. Peeling just wastes food and time.
You will steam the vegetables in stages by adding more layers to the steamer as you go. Utilizing a medium steamer or pot with a steamer basket, turn on the heat to medium high heat. First add the potatoes to the steamer. Cover and steam for about 8 minutes. Next add the sweet potatoes or yams and steam for about another 8 minutes. Next, add the broccolini and asparagus. Cover and steam for about another 8 minutes*.
*Note: steaming times will vary depending on your stove settings and the size of your vegetable pieces. It’s good to check with a fork after about 5 minutes of steaming. You want the vegetables to be al dente.
Remove the vegetables from the steamer and transfer to a medium mixing bowl. Add avocado, cider vinegar, hempseeds, Dijon mustard, salt and pepper. Mix the avocado and seasonings into the vegetables. By smashing the avocado into the salad a little, it releases the oils and gives the salad a creamy effect, without the use of cream or refined oils.
Taste for acid balance (vinegar or lemon juice) and seasonings. Serve immediately on a bed of your favorite lettuce.
